Ingredients for 4 people:
- 8 ripe vine tomatoes
- 1 cucumber
- 1/2 green pepper
- 1 cup of olive oil *
- 1/4 cup white vinegar *
- 1 onion
- 1l very cold mineral water
- 1 clove garlic
- Salt
- 1 teaspoon of cumin * (optional)

Andalusian gazpacho elaboration
First we wash the tomatoes, the pepper and the cucumber well. We peel the cucumber, garlic and onion. To make the garnish of our gazpacho, we are going to reserve a piece of onion, cucumber and pepper.
The rest of the vegetables are cut into pieces of the size that you like the most (if they are small, it costs less to crush them) and we put them in the blender glass with the salt to taste of each one, the vinegar, the oil, the cumin and we crush everything until we obtain a smooth cream. Now we just have to add the water, although, in the ingredients, we indicate a liter. This varies a little depending on each one. The ideal would be to try it and when the gazpacho is to your liking, stop adding water. If you finally decide to put bread on it, you will probably have to increase the amount of water a little.
It goes without saying that Andalusian gazpacho must be served very cold, so it should be left in the refrigerator for at least a couple of hours before serving.
